Bejewelled Brussels Sprouts

Oh, ho ho ho….yes you DO like brussels sprouts! Well we hope you’ll like them pimped up in this recipe. These bejewelled brussels sprouts are a fab way to jazz up these yuletide traditional greens. Get ’em in. You know they’re good for you.

Serves 4

Shopping list

  • 500g brussels sprouts
  • 2 pomegranates
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 2 tsp honey
  • Salt and pepper

 

Let’s do this

  1. Preheat oven to 220°C
  2. Line a baking tray with foil
  3. Halve each of the sprouts and then place into a large bowl
  4. Drizzle the oil, honey and balsamic vinegar over the sprouts and season with salt and pepper
  5. Toss the sprouts so they get coated with the dressing
  6. Pour the brussels sprouts onto the baking tray and place in the oven for 20 minutes
  7. Remove the tray from the oven and sprinkle the pomegranate seeds to ‘bejewel’ the sprouts before serving
